Most hail from colder climates of North America and Canada and popular varieties include North White Cedar (Cedar planks are excellent for fish, especially salmon!), Black Cherry, Mountain Mesquite, Acadian Oak, Wild Apple, DownEast Hickory, Sugar Maple, Northern Beachnut, Golden Alder and North Atlantic Olive.

Beware of purchasing a plank from a timber supplier for plank grilling purposes, the wood may be treated to prevent insect infestation, mold, and rot and as such not safe for human consumption as the poisons will be absorbed into foods cooked on such planks.
